In the Documentation → “Element Documentation” field associated with a manual task, is there any way to insert formatted text instead of just plain text ?

What do you want to do with the formatted text?
How do you want to render it?
Sounds like you want to use something like markdown and then render later
the idea is to guide the user when they’re about to claim a manual task from the tasks list, by presenting them with an explanation of the task in the ‘description’ tab. Markdown would be great but it does not look like it can be rendered by the Camunda app.
That is beyond the typical scope. You will need to parse the XML and grab the documentation data. This would be a custom plugin and extension you would have to build with new endpoints to get the data per task.
